An important benefit from eating freshly milled whole grain flour products is vitamin E. Bread and other processed products bought in stores today have vitamins stripped from them. Vitamin E is found in the germ of the wheat kernel. Its function is to prevent fatty acids and fat-like substances (vitamin A, carotene, pituitary, sex, and adrenal hormones) from being destroyed within the body by oxygen. Those substances keep our body cells healthy and working properly. Other sources of vitamin E are eggs, apples, spinach, broccoli, peanut butter, oils (peanut, sunflower, olive, safflower, etc), nuts, tomatoes, sweet potatoes, and more. Moms, you can improve your family's health by cutting processed flours and sugars, serving whole grain foods, fresh fruit and vegetables, and encouraging the drinking of water. (more on water next week) Let's get back to basics.
